The physiological function of the exocrine pancreas consists in the synthesis and secretion
of digestive enzymes into the small intestine to catalyze the hydrolysis of food constituents.
Many of these enzymes are proteases that are synthesized as proenzymes (zymogens) that
require a proteolytic activation by cleavage of their propeptide. In the pancreatic juice
